Dandelion Season is here again
It's Beautiful, Healthy and all edible,
Roots leaves and flowers...
You don't have to be a horse, rabbit
or buffaloe, to enjoy it...
Pick the prettyest leaves,
Choose naturally sound areas
Wash them well, and feel health
invading your body <3

The goodies in this Salad are:
A fresh apple and dried apricots cut small,
Raisins, small squares of feta cheese,
Small squares of brown bread fried in a bit of oil, chili powder and salt,
A few carrots, boiled, sliced in sticks, and fried a little bit for good measure,
Of course my Dandelion leaves, washed and stripped off their stems,
so only the beautiful greens remain,
It's nice to add some sesame, sunflower or pumkin seeds,
pine nuts, wallnuts... Either-either, not all ...
Dressing: finely chopped garlic, pickled ginger and a Thai chili,
a teaspoon of honey, a measure of thin soy sauce
and an equal measure of lemon juice.
Mix it all, and garnish with the carrots for prettiness.

Dandelion salad |
a squirt of oil, a little salt, add water and knead,
till dough is manageable, without sticking to hands,
let it sit , while in a little bit of oil, you fry
finely chopped garlic and fresh ginger,
some mustard seeds if you want,
Add your cleaned and stripped Dandelion greens ,
stir so nothing gets burned, fry till the mix looks done,
On a surface sprinkled with flour,
roll out a small fistfull of a dough ball,
flatten and put some of the Dandelion mix on top,
than wrap the dough around so the mix is trapped inside,
and roll again with the wooden roller,
till you have a nice flat round pancake,
fry in a pan with very little oil,
or an almost dry non-stick pan,
when both sides are done, serve with butter on top
and yogurt on the side.
we will have to look into Dandelion Chutney...

A wonderful discovery!
7 or 8 nice bright Dandelion flowers, make 1 big lovely cup of tea.
Wake up roaring with the DandeLions |
put them in the cup, with a spoonful of honey,
and poor your boiling water over them... let the tea sit for 5 minutes,
A very tasty detox |
before the usual small flies and other beasties start getting buzzy,
because than the flowers become their territory,
and one should wait till they are done,
or else they will be miserably floating in your cup...
Dandelion flower tea is lively and subtle in taste...
It is said to be healthy for your liver and to help digestion
You can dry flowers for later, when the season is over.
